Pickled Onions 🧅 | The perfect addition to your summer BBQ! 🌞🌴

INGREDIENTS (Makes about 1 litre):
•200 ml lime juice (works as well with lemon)
•100 ml squeezed orange juice (use a colander to stain the seeds)
•150 ml Apple cider vinegar (I used ACV w/the mother)
•20 g (5 Tsp) White sugar
•2 Tsp Salt
•½ Tsp Oregano
•½ Tsp Ground Chile de árbol
•7 whole Black pepper
•500 g Red onions (thinly sliced)

•You will need a 1 liter (34 fl oz.) glass jar

STEPS:
(1) In a glass, combine the lemon & orange juice with the vinegar, sugar & salt. Stir until the sugar & salt are dissolved. Add the oregano, chile, black pepper & stir again.
(2) Add some onion slices to the glass jar & pour some of the mixture on top. Press the onion with a wooden spoon to compress it. Add more onion slices & liquid, & press again. Continue in this manner until the onion is well compacted & the jar is full.
(3) Make sure the onion is submerged & let it rest for 48 hours in the refrigerator.
(4) 48 hours in the refrigerator, shaking the jar from time to time.
(5) After this time, they are ready to use. Keep them in the refrigerator & they will last for up to one month.
